1. Coconut Water Chicken Adobo (Lighter Filipino-Style)
Vibe: Bright, tangy, savory with a subtle natural sweetness from the coconut water. Comfort food with a twist—and it tastes even better the next day.
🛒 Ingredients:
1.5 lbs chicken thighs (bone-in, skin-on or boneless)
3/4 cup coconut water
1/4 cup soy sauce
1/4 cup cane vinegar (or white vinegar)
4 cloves garlic, smashed
2 bay leaves
1 tsp whole peppercorns
Optional: 1 tsp brown sugar or a splash of fish sauce
👩🍳 Instructions:
Combine all ingredients in a pot or deep pan.
Bring to a boil, then lower to a simmer for 30–40 minutes, flipping chicken halfway.
Let the sauce reduce until glossy. Serve with rice and spoon the sauce all over.
🍗 Why it hits: Coconut water gives a mellow sweetness that balances the salty-tangy adobo flavor without feeling heavy.
2. Coconut Water Citrus Refresher (Mocktail or Cocktail)
Vibe: Poolside-in-your-mind. Naturally hydrating, super refreshing, and easy to spike with rum or tequila if the mood strikes.
🛒 Ingredients:
1 cup coconut water (chilled)
Juice of 1 lime
Juice of 1/2 orange or grapefruit
1 tsp honey or agave (optional)
Ice, mint, and citrus slices for garnish
Optional: 1 oz rum, gin, or tequila
👩🍳 Instructions:
In a shaker or glass, mix coconut water, citrus juices, and sweetener (if using).
Shake or stir with ice.
Pour into a glass with more ice. Garnish with mint and citrus slices.
Optional: spike it if you’re feeling extra 🌞🍹
💦 Why it works: Super hydrating, lightly sweet, and way more interesting than plain juice or soda. Coconut water makes it feel luxe and nourishing.
